I know I usually write about crochet and crafty things but I have recently been trying to learn more about the low carb way of eating.
I have been experimenting with new low carb recipes and today when I got home I just wasn't sure what I wanted for fix for dinner. After scanning the cabinets and the fridge I found Hamburger and mushrooms that needed to be cooked, a can of enchilada sauce, and a bag of low carb tortillas.
With those findings this recipe was born...
First I scrambled about 1 pound of hamburger together with 1 small onion and about 10 baby bella mushrooms sliced.

Once this had started to brown I added about 1/3 of the can of Enchilada sauce and some Adobo seasoning, salt, and pepper and let it all simmer together until done.
Doesn't that look yummy!!
Then I took my low carb tortillas and put a little cheese in them and some of the beef mixture and rolled them up and placed them in a casserole dish. Poured the rest of the can of Enchilada sauce on top and sprinkled more cheese. I then baked them at 350 for 10 minutes or so until the cheese was melted.
And this was the End result...
My dish would only hold 4 so I actually ended up using to dishes to make a total of 8.
If you like a lot of Enchilada sauce you may want to use to cans as one was only enough to cover the tops of them.
If you wanted to reduce your carbs even more you could skip the low card tortillas and just layered the other ingredients in a casserole dish and bake.
I was gonna do a picture of one on my plate with some sour cream but by the time they come out of the oven I couldn't stand it anymore and had to try one. I acutally ended up eating two.. I was miserable full but they were so good I couldn't help it! That kind of lack of will power is probably why I need a low carb diet anyway! LOL!
If you try this please let me know what you think and share any variations you may have made to give the rest of us some ideas.
Mushroom Beef Enchiladas
Ingredients:
1lb Hamburger
1small onion chopped
10 Baby Bella Mushrooms sliced
1 can of Enchilada Sauce
1 packege of 8 low carb tortillas
about 1 cup of Colby Jack Cheese
Adobo Seasoning
Salt
Pepper
Preheat oven to 350 degrees
Scramble hamburger, onion, and mushrooms together. Once Hamburger starts to brown add seasonings and 1/3 of the can of Enchilada Sauce. Simmer until done.
To each low carb tortilla add a sprinkle of cheese and some of the hamburger mixture. Roll up and place in casserole dish.
Once all tortillas have been rolled and placed in dish pour the rest of the Enchilada sauce on top and sprinkle remaining cheese.
Bake for approx 10 min or until cheese is melted. .
