I know I usually write about crochet and crafty things but I have recently been trying to learn more about the low carb way of eating. I have been experimenting with new low carb recipes and today when I got home I just wasn't sure what I wanted for fix for dinner. After scanning the cabinets and the fridge I found Hamburger and mushrooms that needed to be cooked, a can of enchilada sauce, and a bag of low carb tortillas. With those findings this recipe was born... First I scrambled about 1 pound of hamburger together with 1 small onion and about 10 baby bella mushrooms sliced. Once this had started to brown I added about 1/3 of the can of Enchilada sauce and some Adobo seasoning, salt, and pepper and let it all simmer together until done. Doesn't that look yummy!!
